Ingredients

Fresh ingredients:

  • 1 whole chicken (approx. 1.8 kg)
  • 2 tablespoons BBQ dry rub (or homemade: paprika, garlic powder, onion powder, black pepper, salt)
  • Optional brine: 4 L water, 100g salt, 75ml Maple Pure Syrup (we prefer to use Dark Robust for cooking)

Instructions

  1. Optional Brining: Combine 4 L water with salt and maple syrup. Submerge the chicken and refrigerate for 4 hours. Rinse and pat dry.
  2. Seasoning: Brush the chicken generously with Smoked Maple Syrup, then coat evenly with BBQ rub.
  3. Grill Prep: Preheat your grill or smoker to 120°C using indirect heat. Add soaked applewood or hickory chips for enhanced flavour.
  4. Smoking: Place the chicken breast-side up on the grill. Cook for approximately 2 hours, basting every 20 minutes with the mop sauce.
  5. Finishing Touch: Chicken is done when it reaches 74°C at the thickest point. Let rest 10 minutes before serving.
